Cinnamon Spice Sugar Almonds

My friend Charlene made these for christmas last year at our MOPS meeting and ever since then I've wanted to make them. Here is my first attempt on making them! and they actually came out pretty well!! I couldn't stop eating them!

Ingredients:
1 Egg White
1 tsp Vanilla
3 cups Raw Almonds
1/2 cup Brown Sugar packed
1/2 cup Granulated Sugar
1/4 tsp Salt
2 tsp Cinnamon

Directions:
Heat oven 250 degrees
line baking sheet with foil and spray with PAM, or parchment paper.
Beat egg white then add vanilla until frothy but not stiff.
Stir in almonds until all are wet. Set asside.
In another bowl mix sugars, salt and cinnamon then add to the wet almonds.
Add a single layer of coated almonds to prepared baking sheet (I used foil with PAM spray easy clean up!) bake for 1 hour in oven 250 degrees mixing/flipping every 20 minutes. Your house will smell lovely! Store in an air tight container.

Red/ Purple Frozen Grapes

I Froze purple/red grapes and I have to say I enjoyed the green frozen grapes more then the red ones. And I personally am not a fan of green grapes to eat. You be the judge... Green or Red :)

Chocolate Chip Cookies

I am not going to post the recipe because These are just the Toll House cookies, got the recipe from the back of the chocolate chips bag. :) But I am posting because I've never cooked these so well until my husband  taught me what to do. All these years I've avoided making chocolate chip cookies because they were either to big and fluffy or dry. I couldn't figure out what I was doing wrong. One day my husband "watched" me make them and to my surprise I have been making them wrong, I was dumping everything into one big bowl and mixing everything. Oops!! So now I'm proud to make chocolate chip cookies with the help from my husband and now they look and even taste great!! Thanks hubby!!

Sweet Chili Chicken & Veggies

I've been wanting to make this dish my sister would make us with chicken over rice and cheese wrapped with asparagus... Its so yummy!! But of course I don't have any asparagus on hand (but know you can make this dish also with it and its even better!) Any ways here is my version of my sisters chicken dish!

Sweet Chili Chicken & Veggies

Chicken Breast
Mozzarella Cheese
Zucchini
Squash
Salt and pepper to taste
Sweet chili sauce
Cooked rice (stove top or in a cooker)
(If using asparagus omit zucchini and squash or heck have all three)

Place chicken breast in a baking dish cover with veggies and cheese, season with salt and pepper and drizzle sweet chili sauce on the outer edge. cook 350 oven for about 25-30 minutes. Remove from over check if chicken is completely cooked. Place oven cooked rice then drizzle more sweet chili sauce on top.

Fish house Banana Pudding

Back home in Tacoma WA there is a place called "the fish house" best fish in town!! They have this banana pudding that is amazing!!! Its not Like your typical pudding... Its thick, creamy, scrape the bottom of the container oh so good yummy pudding!! I've tweaked my recipe to copy cat theirs and I think its pretty darn close!!! So here is my version of Fish House Banana Pudding:

One large box of instant banana pudding mix
Heavy whipping cream (half of a pint)
Whipped cream (cool whip)
Half cup milk
Banana slices
Nilla wafers

In a mixer blend all the ingredients but the banana and wafers. Mix until light and fluffy. It will be thick. Fold in the sliced banana. In a bowl place a few wafers on the bottom then layer with pudding mixture. Add an other layer of wafers and and other layer of pudding. When done place 5 wafers on the top. You can eat right away or place in fridge to set for 20-30 minutes, if you put it in the fridge the wafers will become slightly soggy.

*this is most definitely not a "diet" food**

Grilled onion, zucchini & chicken salad

Grilled Onions Zucchini & Chicken Salad

Romaine lettuce
Sliced onions
Chicken breast
Zucchini
Salt and pepper to taste

Directions: cook chicken breast season with salt and pepper cube into bite size.
Grill zucchini and onions until tender not fully cooked. (I used the same pan as the chicken, or if you have a George Foreman an small grill that works great too) season with salt and pepper lay cooked chicken, onions and zucchini on top of a bed of long Romaine lettuce. You can drizzle any dressings on Top or eat plain.
